The VCC will supply crawfish harvested from clean, Vermont waters to restaurants and consumers in New England.
Although, not a staple in Vermont, the industry is part of the movement for locally harvested crawfish in many states. The Localvore programs in Vermont for Farm to Table products are supportive of new and innovative products produced or harvested in Vermont.
Currently, in Vermont, a limited number of grocery chains offer previously frozen and thawed crawfish from China or Louisiana.
The Goal of VCC will be to initially supply area restaurants that are involved in using local ingredients, to include crawfish on their menu. Crawfish can be used in many recipes in place of shrimp or lobster.
