Fresh off the Farm - Screamin' Ridge

Chef Joe Buley’s culinary carreer has taken him far and wide, from school in Paris at L'Ecole Supérieure de Cuisine Française—Centre Jean Ferrandi, to kitchens in Brooklyn, California, Texas and back to his home state of Vermont where he taught at the New England Culinary Institute (and sat on the board of VFN in its formative years). Since then, Joe has gone back to the land to grow the fresh products he worked with closely as a chef, and now operates Screamin’ Ridge Farm in East Montpelier, Vermont.

Produce coming in (and going out) to Joe’s CSA customers and Restaurant partners…

One of Joe’s long-time customers and friends is Chef Herve Mahe of the Mounted Cat in Burlington—Joe went to school in Paris with Chef Mahe and the two reunited at NECI where they both had teaching positions! Joe delivers, or in a pinch sends product to Burlington with his wife Lori who works at UVM, baby greens, mesculin, mix, herbs and eventually will bring heirloom tomatoes, eggplants, leeks, and “a little of everything” to the Mounted Cat. The two friends will partner at this year’s Annual Forum Dinner on August 3rd. What will these two great chefs be serving up? Last year they wowed with Chilled Roasted Pepper Soup, Vermont Creamery Chèvre Fritter and Crispy Chorizo, but we’ll just have to wait and see what this season brings!
